A published recipe reconstructs a Babylonian lamb stew with beets dating to roughly 1750-1730 BCE, based on ancient cuneiform culinary tablets. The instructions detail searing lamb in rendered sheep fat, then simmering it with beets, arugula, shallots, cumin, beer and leeks, finished with a coriander and herb garnish. A companion recipe for an ancient barley-based sourdough 'beer-bread' called bappiru is also included.
