Beth George, a 63-year-old bagel consultant from upstate New York, has spent the past decade training nearly 100 bagel shop owners around the globe, including clients in India, Korea, Taiwan, Vietnam, Sweden and the Palestinian territories. During a visit to Bagel Barn near Toronto, she advised owner Terry Perusini on repairing a broken $40,000 oven rather than replacing it, while also teaching his staff dough-handling techniques and a proprietary sponge mixture.
