Study: UK fruit and vegetables lost up to 50% of key nutrients since 1960s

A study by startup studio Deep Science Ventures found that UK fruits and vegetables have lost between 20% and 50% of nutrients like potassium, magnesium and copper since the 1960s, meaning people now need to eat roughly twice as much produce to get the same mineral intake. Researchers attribute the decline to degraded soil quality and crop breeding focused on fast growth rather than nutritional content.
